Традиції харчування у Війську Запорозькому (XVI-XVIII ст.)

Abstract

UA : Кваліфікаційна робота – 64 сторінок, 2 додатки, 53 літературних джерела. Метою цього дослідження є виявлення особливостей традиційного харчування Війська Запорозького впродовж XVI-XVIII ст. та вивчення її потенційної інтеграції в сучасні заклади ресторанного господарства. Відповідно вищезгаданої мети окреслено такі завдання: – провести комплексне теоретичне дослідження кулінарних звичаїв Війська Запорозького в період XVI-XVIII ст.; – дослідити основні страви, що складали основу раціону харчування Війська Запорозького у зазначений період.; – оцінити тенденції відродження козацької кухні в сучасних закладах України та закордоном. Об’єкт дослідження – традиції харчування Війська Запорозького у XVI-XVIII ст. Предмет дослідження –процеси, пов'язані з еволюцією звичаєвої козацької кухні. Методи дослідження: аналіз, системний аналіз, узагальнення, обґрунтування теоретичних засад проблеми дослідження. Основна частина роботи присвячена дослідженню потенціалу відновлення традицій харчування козацької доби.

EN : Qualification work – 64 pages, 2 appendices, 53 literary sources. The purpose of this study is to identify the features of the traditional food of the Zaporizhzhia Army during the XVI-XVIII centuries and to study its potential integration into modern restaurant establishments. In accordance with the above goal, the following tasks are outlined: – to carry out a comprehensive theoretical study of the culinary customs of the Zaporizhzhia Army in the period of the XVI-XVIII centuries; – to investigate the main dishes that formed the basis of the Zaporizhzhia Army's diet during this period – to evaluate the trends of revival of Cossack cuisine in modern establishments in Ukraine and abroad. The object of research is the food traditions of the Zaporizhzhia Army in the XVI-XVIII centuries. The subject of the study is the processes associated with the evolution of traditional Cossack cuisine. Research methods: analysis, system analysis, generalization, substantiation of theoretical foundations of the research problem. The main part of the work is devoted to the study of the potential for restoring the food traditions of the Cossack era.
