Ресторації Запоріжжя: історичний та сучасний аспект

Abstract

UA : Кваліфікаційна робота – 68 сторінок, 1 додаток, 60 літературних джерела. Метою бакалаврської кваліфікаційної роботи є аналізування розвитку ресторацій міста Запоріжжя з урахуванням його історичного та сучасного контекстів. У відповідності до поставленої мети передбачається виконання таких завдань: ● розглянути теоретичні основи ресторанного господарства як складової індустрії гостинності; ● деталізувати історичний контекст та сучасний стан розвитку ресторацій Запоріжжя; ● проаналізувати виклики та можливості розвитку ресторацій Запоріжжя за допомогою PEST- та SWOT-аналізу. Об’єкт дослідження: ресторації Запоріжжя. Предмет дослідження: історичний та сучасний контексти розвитку ресторацій. Методи дослідження: системний підхід, аналіз, індукція, синтез, індукція, дедукція, порівняння. Основна частина роботи присвячена дослідженню історичного контексту розвитку ресторацій Запоріжжя та сучасному розвитку ресторанного господарства міста, зокрема поточних викликів та можливих перспектив.

The purpose of the bachelor's qualification work is to analyze the development of restaurants in the city of Zaporizhzhia, taking into account its historical and modern contexts. In accordance with the set goal, the following tasks are expected to be performed: ● consider the theoretical foundations of the restaurant business as a component of the hospitality industry; ● to detail the historical context and the current state of development of restaurants in Zaporizhzhia; ● analyze the challenges and opportunities for the development of restaurants in Zaporozhye using PEST and SWOT analysis. Object of research: restaurants of Zaporizhzhia. The subject of research: historical and modern contexts of the development of restaurants. Research methods: systematic approach, analysis, induction, synthesis, induction, deduction, comparison. The main part of the work is devoted to researching the historical context of the development of restaurants in Zaporizhzhia and the modern development of the city's restaurant industry, including current challenges and possible prospects.
