Організація технологічного процесу надання послуг гостинності в готелях України

Abstract

UA : Кваліфікаційна робота складається зі вступу, трьох розділів, висновків, 44 літературних джерел. Загальний обсяг роботи - 78 сторінок. Мета дослідження полягає у комплексному аналізі організації технологічного процесу надання послуг гостинності в готелях України, ідентифікації ключових проблем функціонування галузі в умовах післявоєнного періоду та науковому обґрунтуванні перспективних напрямків її розвитку. Об'єктом дослідження є процес надання послуг гостинності в готелях України в умовах післявоєнного періоду. Предметом дослідження виступають теоретичні, методичні та прикладні аспекти організації технологічного процесу надання послуг гостинності на прикладі готелю «Інтурист» у м. Запоріжжя. У роботі використані теоретичні, емпіричні, прогностичні методи. У першому розділі досліджено теоретичні засади організації технологічного процесу надання послуг гостинності. Розкрито сутність індустрії гостинності як міжгалузевого комплексу, проаналізовано концепцію якості послуг як ключового фактору конкурентоспроможності готелів, охарактеризовано етапи та особливості технологічного процесу обслуговування гостей. Другий розділ присвячено обґрунтуванню методології дослідження процесу надання послуг у готелях України. Сформульовано мету, завдання, об'єкт і предмет дослідження, підібрано релевантні методи, розроблено план організації дослідницького процесу. У третьому розділі презентовано результати прикладного аналізу на матеріалах готелю «Інтурист», що дозволило оцінити сучасний стан розвитку підприємства, дослідити організацію технологічного процесу надання послуг, ідентифікувати ключові проблеми діяльності в умовах війни.

EN : The thesis consists of an introduction, three chapters, conclusions, and a list of references containing 44 items. The total volume of the work is 81 pages. The purpose of the study is to comprehensively analyze the organization of the technological process of providing hospitality services in Ukrainian hotels, identify key problems in the industry's functioning in the post-war period, and scientifically substantiate promising directions for its development. The object of the research is the process of providing hospitality services in Ukrainian hotels in the post-war period. The subject of the study is the theoretical, methodological, and applied aspects of organizing the technological process of providing hospitality services, using the example of the "Intourist" hotel in Zaporizhzhia. The work employs theoretical, empericial, prognostic methods The first chapter explores the theoretical foundations of organizing the technological process of providing hospitality services. The essence of the hospitality industry as an intersectoral complex is revealed, the concept of service quality as a key factor in the competitiveness of hotels is analyzed, and the stages and features of the technological process of guest services are characterized. The second chapter is devoted to substantiating the research methodology for the process of providing services in Ukrainian hotels. The purpose, objectives, object, and subject of the study are formulated, relevant methods are selected, and a plan for organizing the research process is developed. The third chapter presents the results of an applied analysis based on the materials of the "Intourist" hotel, which made it possible to assess the current state of the enterprise's development, investigate the organization of the technological process of providing services, and identify key problems of activity in the conditions of war.
