UA : В роботі 61 сторінок, 4 таблиці, 15 рисунків, було використано 53 літературних джерел, 29 з них на іноземній мові. Об’єкт вивчення – пектин різного ступеня етерифікації та молекулярної маси, білки знежиреного молока. Предмет дослідження – фазові рівноваги в системах вода–білки знежиреного молока–пектин. Мета роботи – вивчити особливості встановлення фазових рівноваг в системах вода– білки знежиреного молока – поліцукриди та вплив на них структури макромолекул поліцукридів. Методи досліджень та апаратура – титриметричний, фотометричний, розрахунковий, хімічний посуд, ваги лабораторні, центрифуга, електрообладнання. В результаті експериментальних досліджень вивчили особливості встановлення гетерогенних рівноваг в системах вода – білки знежиреного молока – пектин та вплив на фазове розшарування структури макромолекули поліцукрида.

Object of study - pectin of varying degrees of esterification and molecular mass, protein of skimmed milk. The subject of the study is phase equilibrium in systems of water-proteins of skimmed milk-pectin. The aim of the work is study the peculiarities of establishing phase equilibriums in water-proteins of skimmed milk - polycucrides and the influence of the structure of polycukrid macromolecules on them. Research methods and equipment - titrimetric, photometric, calculated, chemical utensils, laboratory scales, centrifuge, electrical equipment. As a result of experimental studies, the peculiarities of the establishment of heterogeneous equilibrium in systems of water - proteins of skimmed milk - pectin and the effect on phase stratification of the structure of the polycuclear macromolecule were studied.
